Crispy Ivy Gourd/ Kovakai Fry!

Ivy Gourd has been classified as a medicinal herb in traditional Thai and its a ayurvedic medicine. It contains beta - carotene, major vitamin A precursor from plant sources. It is also considered a good source of protein and fiber. 

Ingredients:

  • Ivy gourd(lengthwise cut) - 2 cups.
  • Onion (Chopped) - 1/4 cup
  • Red Chilli powder - 1 tbsp
  • Turmeric powder - 1/4 tsp
  • Mustard seeds - 1 tbsp
  • Cumin Seeds - 1/2 tbsp
  • Urad dhal - 1/2 tbsp
  • Salt to taste
  • Curry leaves to garnish


Preparation :

Spread the Ivy gourd in a microwaveable plate and sprinkle some salt and oil and microwave for 10 minutes.
In a pan, splutter the mustard and urad dhal with oil. Now add the chopped onion and saute it for a while till the onions turns brown
Add the Ivy gourd and fry for few minutes. Add the Chilli powder and turmeric powder and salt. 
Cook the Ivy gourd in medium flame until it becomes crispy and tender. Serve with any kind of rice...but it goes well with curd rice. :) Yummm!
